Pap Recipe (South African Polenta)
2 cups white corn meal
4 cups water
1 tsp salt
1. Put water and salt in a large pot and bring to the boil.
2. Gently add corn meal while stirring (ideally with a sturdy wooden spoon), and continue stirring until smooth.
3. Cover pot with lid and simmer on low heat for 30 to 45 minutes, stirring occasionally.
Best served with sheba (tomato relish) and boerewors (farmer sausage) or boerie balls (meatballs)
